Ingredients

1 15oz can of unsweetened coconut milk

1 15oz can of low-fat or light, unsweetened coconut milk

⅓ cup raw honey

2 tsp vanilla extract

¼ tsp nutmeg

2 tsp cinnamon

1 cinnamon stick

½ TBSP ground chia soaked in 2 tablespoons water

Pinch of cloves powder - Optional

100 grams raw honey

2 tsp (10 ml) vanilla extract

¼ tsp (1.25 ml) nutmeg

2 tsp (10 ml) cinnamon

1 cinnamon stick

½ TBSP (7.5 ml) ground chia soaked in 2 tablespoons water

Pinch of cloves powder - Optional

Instructions

  • In a medium saucepan pour 1 can of coconut milk with fat and honey.
  • Heat over medium-high heat until boiling. Lower the temperature and let it simmer for
  • approximately 25 minutes.
  • Stir constantly until thick.
  • Let stand to cool down a bit.
  • Add in the blender the mixture, the other can of light coconut milk, vanilla, cinnamon,
  • nutmeg, soaked chia and clove powder (optional).
  • Blend for about 1 minute or until you have a creamy consistency.
  • Add the cinnamon stick
  • Cool and serve over ice.

Notes

DAIN Phase 1, 2 and 3 This drink is not for frequent use. In DAIN phase 1 use chia as tolerated. DAIN Phase 2 and 3: To have a thicker consistency, you could add cashew to the mixture and blend it until it has a creamy consistency. To sweeten and thicken you could also use 1/2 cup of date paste. If the dates are available, it is not necessary to perform the first 5 steps, or use honey and chia. Just add the coconut milk, cinnamon, nutmeg, vanilla and date paste in the blender and blend until reaching a creamy consistency. Use as tolerated.
